Just made and eaten this - you HAVE to try it...

casserole ever...

Lamb and sweet potato , DP and 5 year old DD couldn't get enough. It was gorgeous and i served it with Roasted Garlic new pots... :happy72:

Basically I fried onions, mushrooms, 2 cloves of chopped garlic in olive oil and then added diced lamb to seal, with a splash of dark soy sauce and pepper to season.

Chopped sweet potato and courgettes and popped them in a casserole dish along with the above adding a tin of chopped tomatoes, 1/4 pint of boiling water, fresh rosemary and seasoned with salt and pepper.

Bunged in the oven for 2.5 hours @ 180 degrees.

Absolutley gorgeous and so easy!

Hmmmmm, I’m not a huge fan of lamb but that does sound delish!! Mike loves lamb, might share the recipe with him Very Happy

Sound fab but I would have to replave the corgette with something else as none as my kids like courgette. Infact I have lamb in the freezer will make it tonight as it will be easy to turn into a soup for my LC as she really poorly and can't eat anything at the moment except smooth creamy soups. Poor little thing waiting in for the doctor to make a house visit as she has flu-like symptoms as is in bed as I type sleeping. I have been having to wake her every 2 hours to do her excema creaming, toilet her and give her a tapped wash down as she is so hot and then every 5 hours give her paracetamol, Ibrufen and cough-linctus
